Absolutely approved by my mom, who has already started transferring her top recipes from Pinterest into her very own copy. Here’s one to get you started:

Vanilla Mug Cake

Prep Time: 5 min Cook Time: 1 min Serves: 1

Ingredients:

  • Cake

    • 2 T unsalted butter

    • 1 T milk

    • ½ t vanilla extract

    • 1 large egg yolk (do not add the egg white)

    • 2 T sugar

    • 4 T all-purpose flour

    • ½ t baking powder

    • 1 T sprinkles (optional)

  • Frosting

    • 2 T unsalted butter

    • 2-3 T powdered sugar

    • 1 t milk

Directions:

For the Cake

  1. Add the butter to your mug and melt in microwave.

  2. Whisk in milk, vanilla, egg yolk, sugar.

  3. Whisk in flour and baking powder, stir in the sprinkles.

  4. Microwave for 1 minute. If the top doesn’t look set-up, microwave in 15 second increments until it’s done.

  5. Cool for at least 1 minute.

For the Frosting:

  1. Beat the butter with an electric mixer until smooth.

  2. Beat in the powdered sugar 1 tablespoon at a time to taste.

  3. Beat in milk.

  4. Spread on cake.

 

Notes:

Make double if kids (or s/o) are home.
